Many creations for Semur or dish with sweet soy suce. This one is also easy to make and delicious. The combinations of spices in it filled up the whole house when you're cooking, especially during winter time. When you are done, serve it with white rice, sambal and platter of raw vegetables. "Selamat Menikmati..."

1 chicken (3lb) divided into 16-18 parts
1 lime, juiced
1 tsp salt
1/4 cup oil
8 shallots, thinly sliced
2 salam leaves
2 pieces dried galanga
2 inches ginger
1 stalk lemon grass
5 TB sweet soy sauce
1 cup water
Spice Paste:
2 garlic
1/4 tsp white pepper
2 candle nuts
1/2 tsp coriander
pinch nutmeg and clove
2 medium potato, peeled and cut into wedges
Wash chicken and pour lime juice add the dry ingredients and let stand for 1 hour.
Heat the oil in the pot over medium heat. Fry the shallots until golden brown, take half of it out
and reserve for garnish later. Add the Spice Paste and fry until fragrant then quickly add in the marinated chicken.
Keep stirring until the chicken become stiff. Pour in the sweet soy sauce,
water and lower the heat. Put the lid on the pot and continue cooking until the chicken tender, about 30 minutes.
Put the potato wedges in and cook until the potatoes are done. Garnish with the fried shallots and serve with warm rice
and Sambal Terasi
