Sate Ayam Madura / Madurese Chicken Satay

Sate Ayam Madura, Indonesian Chicken Recipe:

Every night, the hawker passed by with his ringing bell. We were usually up late at night for study. When there were no more schools, we were still up doing cake orders. Who's hungry...? Yes the sate came along. We could hear the bells. So... since our bed rooms were upstairs and our parents bedroom was down-stair, we didn't want to wake them up. We got the sate by walking carefully to the balcony and we lowered the bucket with rope that we already prepared for this situation. The food done, lower the bucket with the plate and money... everything done, didn't disturb the parents! Now it is your turn to try this delicious Sate. "Selamat Menikmati..."

Sate Ayam Madura / Madurese Chicken satay

1 lb chicken meat, cut into 1 1/2inch cubes
20 bamboo skewers, soaked in water for 1 hours

4 TB sweet soy sauce
4 TB oil
1 lime, juiced
1/2 tsp salt

In the glass bowl, marinate the meat for at least 2 hours, if possible for overnight. Thread the meat onto the skewer, allowing 5-6 pieces per skewer. Cook the satay over charcoal for 5 minutes, turn it over and cook for another 3 minute or until the meat are done but not burn by turning them several times. Serve warm with the Peanut Sauce, Compressed Rice & Acar

Peanut Sauce:
1 cup roasted peanuts
1/2 cup water
1 lime, juiced
2 TB brown sugar
3 TB sweet soy sauce
salt to taste

In the food processor, blend all the ingredients into a paste. The sauce should be thick and not to smooth.
