Sambal Mangga / Mango Hot Sauce
Sambal Mangga, Indonesian Sambal Recipes:
Many varieties of mangoes in Indonesia, very sweet, sweet & sour, medium sweet, sour or mangoes that only can be used
in drinks because they are un-eatable just the way they are. This sambal is very nice if you use the sour mango. If you use
regular mango unripened will do OK but not the champagne mango. " Selamat Meenikhhmati... Slurpiiih...!!!"

1 unripened mango
3 jalapeno
3 red bird's eye chilies
1/4 tsp shrimp paste
2 TB brown sugar
bunch of lemon basil, roughly chopped
3 TB oil
Peel mango and chop finely and place it in the bowl. Add the sugar and leave it for 15 minutes. Chop the chillies
and add to the mango followed by the shrimp paste and the basil. Last add the oil, adjust the taste and serve with fish or chicken.
