
2 lb Serrano peppers
12 harbanero peppers or
2 cup bird's chillies
1/2 TB salt
4 TB brown sugar
Clean the chillies, and cut the top off. Boil in 2 cups of water until tender and the water almost gone.
In food processor, pour in the boiled chillies (after they cool down a little) press the pulse until
the chillies are almost paste but still have a lot of big chunks in it.
In the wok, have 1 cup oil ready add the paste and turn on the heat to high until you see bubble on the chillies mixture then lower the heat to low. Add the salt and sugar. Cover and simmer for 1 hour. Adjust the taste, pour in small clean jar, leaving 1 1/2-inch head space. Wipe jar rims and adjust lids. Process in a boiling - water caner for 35 minutes.
