Sambal Jelantah / Garlic Hot Sauce
Sambal Jelantah, Indonesian Sambal Recipes:
For all of you garlic lovers. This is the way you enjoy sambal. Wait until you have this and you will agree with me.
Anytime after you made Fried Chicken, while you are frying the chicken, paste this sambal. After all the chicken are
done. Pour the hot oil into the sambal. Serve with the Fried Chicken.
No chicken no problem. Just heat the oil and pour into the sambal. "Shhhhelamat Meenikhhmati... Slurpiiih...!!!"

1/2 lb bird's eye chillies
5 cloves garlic
1/4 tsp sugar
1/4 tsp salt
1/4 cup hot oil
In mortar or small food processor, paste the first ingredients just until combined, do not paste it too smooth.
Heat the oil in small sauce pan. Take the sambal if using food processor and place it in the glass bowl.
When the oil is hot pour into the chili mixture little by little and mix thoroughly. Adjust the taste
and serve with fried tempeh or ayam goreng.
