Pastel, Indonesian Appetizer
Pastel Step by Step:
Recipe that was hand down to me from my Aunt, Bude Tien. She always have this Pastel made all the time.
She always have the peanut sauce with it.

Dough:
5 cups all-purpose flour
1/2 stick butter, melted
1 cup water, maybe less
1/2 tsp salt
1/2 tsp garlic granulated
Filling:
3 medium carrots, diced
2 medium potatoes, diced
10 green beans, sliced 1/2 inch or
1/2 cup frozen peas
2 cellophane noodles
4 shallots, thinly sliced
2 garlic, bruised and chopped
1/2 cup ground meat
5 TB oil
salt and pepper to taste
Dough: Place the dry ingredients in a bowl, add the butter and slowly pour in the water. Start kneading the
dough until the dough is no longer stick to your hands. If you need more water just add little at a time.
Shape the dough into ball, let the dough rest for 1-2 hours. This way the dough will be elastic and easier to
handle. On floured surface, roll the dough into a thin sheet about 2 mm, cut the dough so it will fit the molding size.
Before you place the dough in the molding, deep the mold into a flour so it won't be sticky.
1. Place 1 TB of filling in it,brush the top side of the dough by the top part of the molding
2. Close up the molding with piece of the dough hanging on the outside of the mold and take the extra
dough off. Open the mold, it should be like the picture. Nice, rounded shaped with no filling shown.
Heat a wok with 4-5 cups oil in it over medium heat. Fry the filled dough until golden brown. Take the Pastel out,
place it on top of paper towel to absorb the extra oil. Serve warm with peanut sauce. Makes 35 medium size.
Helpful Tip: When shaping the Pastel, deep the mold every 3 times of shaping process into the flour.
Filling: Heat oil in the wok over medium heat, fry the shallots until trnsculent then add the garlic.
Keep frying until fragrant. Add the ground meat and cook until the meat are brown. Next add the vegetables,
sprinkle it with salt and pepper and cook until the the vegetables are tender but not soft. Turn off the heat,
adjust the taste and last one add the noodles. Using the heat fom vegetables mixture, mix it troughly and set aside to
cool.
Peanut Sauce:
1/2 jar of peanut Butter
2- 2 1/2 cups water
3 TB sambal oelek
3 TB sugar
1/2 of lime, juiced
In small sauce pan over med heat, heat all of the ingredients until all mix smoothly. Taste it and if you
need more water add little bit more. Depending on your taste, add more sugar, spicy or even sour.
