Nasi Goreng / Fried Rice
Nasi Goreng Mang Iping, Indonesian Rice Recipes:
Whenever my Dad decided to have midnight snack, he always had to have this fried rice. Most of the time he worked
over night. Since he gave up smoking, he wanted to eat something. The only problem was, Mang Iping (vendor's name), parked
far away from home. The way we had to take, pass this old house and nobody would dare to pass after sunsets. Well.... my Dad always found somebody to buy this meal from and ofcourse he had to spend more than he had to in order to enjoy this Fried Rice. Some how, when you open the wrapped, this steam comes out and you can smell the aroma..... it was just lovely.
Beyond the imaginations and the haunted of the "old house" Well, since I'm here, this is the closest to that imaginations.
"Selamat Menikmati..."
2 cups cooked rice
3 stalk choy sum
2 eggs, beaten with pinch of salt
2 TB oil
2 TB oil
Spice Paste:
3 shallots, paste it with
1 garlic
pinch white pepper
3 TB sweet soy sauce
3 bird's eye chili, cut up into bite size
salt to taste
Condiment To Serve: shrimp crackers, cucumber, thinly sliced
Heat 2 TB oil in the wok over medium heat. Pour in the eggs mixture and scramble until cook, put aside.
Using the same wok still, add the rest of the oil and fry the paste shallots and garlic mixture until fragrant
but not burn. Add the cooked rice and the rest of the ingredients, stir fry until all mixture combine and adjust the
taste. Place the rice onto the prepared dish and serve with crackers and sliced cucumbers.
Chef's Note: The cooked rice for all Nasi Goreng must be cold to make sure it doesn't stick together during the frying.
To make the smoky taste on these kind of dishes, Increasing and decreasing the heat play a big role here.
