3 Package Ramen noodles (without the seasoning)
1 TB oil
3 TB sweet soy sauce
4 shallots, thinly sliced
3 TB oil
2 garlic, thinly sliced
1 cup thinly cut up chicken or shrimp
3 stalk choy sum
salt & pepper
2 egg, scramble with 1/4 tsp turmeric and 1/4 tsp salt
2 TB oil
Boil the ramen noodle for 3 minutes, pour into the colander, rinse with cold water and drain it until all the liquid are gone. In the colander still, drizzle the oil and the sweet soy sauce onto the noodles. Mix it thoroughly using chopstick or using your fingers. Heat 2 TB of oil in the wok over medium heat, pour in the eggs and scramble until cook. Put aside. Using the same wok, heat 3 TB oil, fry the shallots until fragrant and add the garlic. Fry until they are golden brown. Add the meat at this stage and sprinkle with salt & pepper, cook it thoroughly. Add the choy sum and stir until all mixture combine then add the noodle, keep stirring until the choy sum are tender, adjust the taste. Pour into the prepared dish, top the noodles with scrambled eggs.
