
Ground meat:
1 cup ground meat
1 medium onion, chopped
1 inch ginger, shredded
1/2 tsp turmeric
1/4 tsp cumin
1/2 tsp coriander
pinch of pepper
salt to taste
5 TB olive oil
15 lumpia skin ready to use (from frozen section)
1/2 cup oil
Heat olive oil in pan over medium heat. Fry the onion and garlic until fragrant. Add the ginger and turmeric stirring constantly, add the ground meat,salt and the rest of the ingredients. Cook until the meat is done. Let it cool down and add to the eggs mixture later. In a large bowl, mix the beaten eggs with salt and sugar followed by the green onions. Then add the cool cooked meat. The filling should be thick for easier use.
Martabak Step by Step:
On the stove, have 2 pans ready. 1 big with 1/2 cup of oil in it and the smaller pan with 3 TB oil. Heat the small
pan over medium heat and follow the step 1 and 2. When you are ready to do the step 3 turn the heat to medium high for
the large pan so it will be ready for the step 3b.
1. In small pan, place the lumpia skin.
2. Place the filling in the middle.

3a. Fold the sides like envelope and turn it up side down.
3b. Prick with fork and move it to the larger heated pan.
4. Fry the Martabak until golden brown and prick several time with fork over the skin (while the skin still soft)
so the inside will cook. Place on the paper towel so it will absorb the access oil and serve with acar.
