If you cannot get the smooth look on the side just use the comb, so nobody will ever notice. Clean the board and present with your border on the top and bottom.
Butter cream frosting is good testing and creamy. If you avoid using shortening you will have the butter cream frosting yellow, if you use half butter and half shortening or white margarine it will be off white and the frosting will hold longer during the hot weather.
Any left over butter cream can be frozen in air tight container for about 3 month. To defrost the frosting, leave it on the counter 1 day before use it so it will be ready by the time you need to use it. Mix it little bit to take the air bubble out.
Whipping cream is a better choice if you don't like frosting. The only thing you cannot do with whipped cream is to make flowers. You can do big borders, that just about it.
To use non dairy whip cream or pastry cream, sold in decorate store, frozen or some grocery store might carry this type of icing. Use to ice and decorate ice cream cake. To color this type of icing use only the paste or gel color not the one with water base (airbrush color) and you will be able to make flower even roses if you practice..........
