Cake Decorating Basics

Cake Decorating should be fun and exciting. This page will provide you with step by step photographs. This day we celebrate many different occasions with cake. From birthdays, graduations, engagements, weddings, anniversaries and lots of holiday seasons. Anything can be used for decorations.

From fresh fruit, edible flowers, sugar flowers, candies, chocolate or make your own flowers from gum paste or frosting. Be cautious for the fresh flowers used in the decorations. Many of them are poisonous. Use organic flower from organic grower or even from your own back yard. Most of the time you'll find simple cake decorating using just top and bottom borders on the frosted cakes or added few flowers or spray of flower design on the top.

Creating the layer: Slicing the cake layers into level tiers can be very hard, but follow the directions and working carefully, you will get good result. It is OK if you slice your cake uneven, after you fill each layer, you will rebuild them by replacing the slices in the same way you took them off and also you can use the icing and filling to help you add a height to uneven cake.

Once you baked the cake, cool completely and chill them. You will have firmer cake and fewer crumbs for the result. That's why you should bake the cake one day ahead. Just in case there's a mistake you still have time to fix it without running out of time.

To fill the layer cake, place the bottom cake on the bottom always, then place the top. If the cakes are more than 2 layers you should repeat the same way. If runny fillings are used, try not to put too much in each layers. Especially when you setting up a wedding cake. The filling should be even with the edges of cake, not coming out, from between the layers. You will have a problem icing the cake.
Chill the cake for about 30 minutes.

Crumb coating the cake, after the cake have been chilled, it is time to crumb coat them. The term crumb coat is putting thin layer of the icing to seal the cake. It is the first layer of icing to fill any gaps or holes and seal the crumbs before you put the final icing. Also great way to do if you are using cream cheese frosting, fudge, marzipan or fondant.

Icing the cake: butter cream are the popular choice for icing. Depending on the butter cream recipe, they can be very delicious. You can make color full flowers, piping images, borders and other things you can use. If you are going to display the cake for long period of time, or the weather is hot, vegetable shortening* should be added to the recipe of the butter cream. It will keep the icing from melting without changing the flavor.

Icing a cake to a smooth, shiny and straight side takes practice and a lot of patience. Use skinny small spatula for the first top and side of the cake, smoother to create the smooth, shiny looks or you can use the comb for the side then continue with the long skinny spatula for the top.

I use this size for cakes up to 10" or 1/4 sheet cakes. You will need an icing tubes if you have a lot of cake to ice, it will help you to get the cake decorating job done faster. Color, variety to choose from paste, gel or liquid. If you don't have to use a lot of color, choose color in the tubes, it is easier to use.
