Bihun Goreng / Fried Rice Noodles:

Bihun or rice noodles used a lot in Indonesian cooking. When ever there's a gathering, this Bihun Goreng always show up. Depending on the cooks, they use different kind of vegetables. Meatballs, ground meat, chicken, shrimps or just plain vegetables will be good with this noodles. "Selamat Menikmati"
Note: There are many varieties of rice noodles. In this recipe, I used the kind that fluffy. You don't need to cook it. Just soak in warm water. Comes in 1 lb plastic bag, variety of brands. If you get the kind that you have to cook, follow the directions on the bag. Usually you have to cook the dried noodle in the boiling water for 6-8 minutes, pour into a colander, run cold water and drain. If the noodles happened to be stuck together by the time you are about to use them, just run it under a cold water again then drain real good. Noodles have to be as dry as possible or they'll stick together again before cooking time.

1 bag rice noodles
1/4 cup soy sauce

1/4 cup oil
1 medium onion, thinly sliced
2 garlic, bruised and chopped

1/4 tsp turmeric
2 inches ginger, shredded
2 carrots, cut into matchsticks
10 sticks green beans, cut diagonally
3 stalks green onion, cut diagonally

3 cups thinly sliced of chicken or
choice of meat or combinations
1/2 tsp salt

Soak the rice noodles in warm water until soft. Drain the water and using scissors, cut the noodles into 3 inches long. Drizzle the soy sauce and put aside. In wok, heat 1/4 cup oil over medium heat. Fry the onion until transculent followed by the garlic, continue cooking until fragrant. Add the ginger and the turmeric followed by the meat and sprinkle with salt, continue cooking until the meat is half done, then add the vegetables. When the vegetables are tender add the noodles. Using 2 spatulas, mix the noodles until all mixture combined. Adjust the taste and pour into prepared dish. Serve with acar.

If shrimps is the meat choice, add the shrimp just after the vegetables almost done. Never cook shrimp for too long, because it will be like rubber. If no meat is the choice, add the vegetables after the ginger and the turmeric then add the noodles just after the vegetables are almost done.
Note: Using 2 spatulas to stir the noodles help you to prevent the noodles from breaking. Take the noodles from the bottom, bring it to the middle, shake the noodles and repeat the same movement until all mixture combine.
