Menado, Northern Sulawesi also famous of their spicy foods and their beautiful under water scene. This recipes I learned from my Aunt in Los Angeles. Her husband from Manado but he doesn't eat much spicy like the rest of the family. You can cut down the chilies in this recipes if you want. "Selamat Makan..."

1 chicken (3 lb) divided into 12-14 parts
1 medium lime, juiced
1 tsp salt
2 tomatoes, cubed
1/2 cup water
Spices:
3 TB sambal oelek
3 bird's eye chilies
5 garlic, bruised and chopped
8 shallots, thinly sliced
3 inches ginger, bruised and thinly sliced
3 kaffir lime, thinly sliced
1 lemongrass white part only, thinly sliced or bruised
5 TB oil
bunch of lemon basil, leave part only
Rub the chicken with lime and salt and let the liquid drained. Set aside for about half an hour.
Heat the oil in a wok over medium heat. Fry the shallots until transculent then add the garlic, continue frying until
fragrant then add the ginger, kaffir limes, marinated chicken and tomatoes.
Cook the chicken until stiff then add the chilies, stir fry for 5 minutes then pour in the water.
Continue cooking until the chicken is done.
If the chicken still not done and there are no more liquid, add another 1/2 cup of water to it. Adjust the taste and
add the lemon basil. Serve warm with whit rice.
Note: another versions, take out the chicken when it's done. Place on top of the burning charcoal to give a BBQ taste to it. Do not burn it. You just want to have the grilled taste. place it onto the prepare plates and pour the spices sauce on top of the chicken.
